Flour weight depends on how you fill the cup. Spooning it in and leveling gives a lighter cup than scooping from the bag, and sifting makes it lighter still. If a recipe lists grams, weigh it.

Getting an accurate cup

For dry ingredients, spoon the ingredient into a dry measuring cup and level it with a straight edge. Scooping straight from the bag packs flour down and can add 10–20% more. Pack brown sugar firmly. For liquids, use a clear liquid measuring cup and read it at eye level.

If you are converting a US recipe to bake by weight, convert each ingredient separately. Liquids and fats convert reliably; flour is the one ingredient where your own cup may differ from the chart, so weigh a cup of your flour once and use that number.

Questions bakers ask

How do you convert cups to grams?

Multiply the number of cups by the weight of one cup of that ingredient. One cup of all-purpose flour weighs 125 g, so 2 cups is 250 g. There is no single cups-to-grams number, because every ingredient has a different weight per cup.

How many grams is 1 cup of sugar?

One US cup of granulated sugar is 200 g. Packed brown sugar is 220 g per cup and unsifted powdered sugar 120 g.

How many grams is ½ cup of butter?

½ cup of butter is one US stick: 113 g, 4 oz or 8 tablespoons.

How many grams is 1 cup of milk or water?

A cup of water weighs 237 g and a cup of whole milk 244 g. For water, milliliters and grams are the same number.

How many grams is ¼ cup?

It depends on the ingredient: ¼ cup of all-purpose flour is 31 g, of granulated sugar 50 g, and of butter 57 g (4 tablespoons).
